QUICK & EASY WEEK NIGHT DINNER - Beef & Broccoli
During the week recipes including beef are limited at my house. Often we have tacos, hamburgers, or we grill steaks. So what do you do when the grill master of the house doesn't want to grill or when you are taco-ed out (if that is a real thing)? This recipe is your solution -easy & quick with great flavors that anyone can whip up in no time.
QUICK & EASY Beef & Broccoli
HERE IS WHAT YOU NEED: Skirt steak, broccoli, long grain white rice (or other boil in bag/microwave option), beef stock, fresh garlic, brown sugar, corn starch, soy sauce, ginger , onion powder, garlic powder, water, salt + pepper
WHY THIS WORKS DURING THE WEEK: The recipe takes about 30 minutes total, creates minimal mess, and is delicious. Options for decreasing time even more - use frozen broccoli or steamer bags, use boil in a bag or microwave rice packets.
QUICK & EASY WEEKNIGHT DINNER - Beef & Broccoli
Ingredients:
1 lb skirt steak
1-2 heads broccoli chopped
3/4 cup long grain white rice or other rice option
1/4 cup brown sugar
1/4 cup soy sauce
3-4 cloves fresh garlic minced
2 tbs corn starch
1 tsp onion powder
1 tsp garlic powder
1 tbs oil (I use sesame for this recipe)
Salt + pepper to taste
Instructions:
Slice skirt steak into half inch pieces (I prefer to then cut long pieces in half or thirds, but it is really preference). Place steak in separate bowl. Sprinkle with half the amount of corn starch until all meat is dusted.
In a large skillet, heat oil over medium heat. Add skirt steak to skillet and cook until browned occasionally turning pieces.
In a bowl combine brown sugar, soy sauce, garlic, ginger, onion powder, garlic powder, remaining corn starch and whisk until sugar dissolved.
Once meat has browned add combined liquid and chopped broccoli. Cook until liquid has thickened and broccoli is tender.
Prepare rice per box instructions.
Serve skirt steak & broccoli over rice & Enjoy!
