Quick & Easy Week Night Dinner - Honey Miso Glazed Salmon
Salmon is one of my go-to proteins, but I totally get that it is not everyone's favorite. Typically I prepare the salmon pretty plain: lemon, olive oil, thyme or rosemary. I was feeling a little burnt out with that flavor combination so I ventured out and attempted a miso honey glaze. I have never worked with Miso before and I don't know exactly what I was expecting, but was surprised when it was more of a paste. I know you can get dried miso, but everything I read said the fresh stuff was better. Regardless, the glaze was amazing and completely changed the flavor profile of the salmon. If you are on the fence about Salmon then this recipe is totally up your alley.

Quick & Easy Honey Miso Glazed Salmon
HERE IS WHAT YOU NEED: Salmon, miso, honey, soy sauce, Sriracha, olive oil, salt, pepper, garlic powder
WHY THIS WORKS DURING THE WEEK: The salmon and the glaze are the stars of the show so I kept the sides simple. I did steamed green beans and added black sesame seeds (because why not...I had them from a previous recipe) and a steamer bag of Archer Farms coconut rice. Fish usually takes less cooking time than chicken so thats a plus too.
LET'S GET COOKING:
Quick & Easy Week Night Dinner - Honey Miso Glazed Salmon
INGREDIENTS:
2 tbs olive oil
1 lbs salmon filet (I usually buy mine in one large piece but you could do several smaller pieces too)
3 tbs white miso
3 tbs low sodium soy sauce
3 tbs honey
1 tbs Sriracha
1 tbs garlic powder
1 tsp salt
1 tsp pepper
INSTRUCTIONS:
Preheat oven to 400 degrees.
In a medium bowl, whisk miso, honey, soy sauce, Sriracha, and garlic powder until miso is dissolved and set aside.
Coat baking dish in olive oil to prevent fish from sticking. Place fish in oiled baking dish.
Pour glaze over salmon, completely coating the fish.
Place in oven and cook for 12-16 minutes depending on thickness. Once 15 minutes is up, broil for 2 minutes.
While fish is cooking prepare sides.
Serve & enjoy!
