Quick & Easy Week Night Dinner - Baked Chicken Parmesan
My maternal side is 100% Italian so I grew up mainly eating Italian food. Not specifically how Italian food is represented in America, but everything had an Italian flare. Simple, fresh, and classic. My husband laughs at me because he thinks I could eat Italian food every day of the week and for the most part I totally can. He thinks it is ridiculous I only want Mexican food once about every two week. He could eat Mexican food every day (so he says).
This recipe is reinvented chicken parmesan, all the things you love about the dish with way less effort. No messy pan frying necessary. No dredging things in flour, egg, and then back again. Assemble this bad boy ahead of time, heck, even days before. Then just simply bake when you are ready to enjoy.

Quick & Easy Baked Chicken Parmesan
HERE IS WHAT YOU NEED: chicken breasts, bread crumbs, mozzarella cheese, tomato sauce, bread crumbs, garlic powder, salt +pepper.
WHY THIS WORKS DURING THE WEEK: Simple ingredients, make ahead, yummy leftovers...I assembled this dish the morning before I left for work so that I could simply pop it in the oven when I got home. Bake for 45 minutes and you are done. I made a very simple side salad and cut up french bread. You could also put over pasta if you prefer.
LET'S GET COOKING:
Quick & Easy Week Night Dinner - Baked Chicken Parmesan
INGREDIENTS:
2 tbs olive oil
3-4 large boneless, skinless chicken breasts
1/4 cup Italian style bread crumbs
1 large jar of spaghetti sauce (use your favorite)
4 oz mozzarella cheese sliced
1 tbs garlic powder
1 tsp salt
1 tsp pepper
INSTRUCTIONS:
Preheat oven to 400 degrees.
Coat baking dish in olive oil and place chicken breasts evenly in the dish.
Sprinkle chicken breasts with garlic powder, salt, & pepper. Then continue with bread crumbs.
Pour spaghetti sauce evenly in the baking dish, covering the chicken breasts completely.
Place sliced mozzarella evenly across chicken breasts.
Place in the oven for about 45 mins or until chicken's juices run clear. (Mine took about 60 minutes because one of the chicken breasts was a MONSTER).
While chicken is cooking prepare sides.
Serve & enjoy!
