Quick & Easy Week Night Dinner - Buffalo Shrimp Tacos
If you look back at some of my old recipes, you will find about a million shrimp recipes and that is because shrimp is one of the fastest proteins to cook, inducting it into the week night dinner hall of fame. If you are worried about freshness or buying and cooking in an appropriate amount of time, rely on the frozen varietal and wipe all your worries away. If frozen isn’t you thing, plan to cook the shrimp the day of purchase or the following day. Either way you are guaranteed a quick and fresh tasting shrimp dish.
I have a thing for shrimp tacos. I order them a lot when we go to taco shops or authentic Mexican restaurants. I am not sure where my love for shrimp tacos came from, but one of my favorites is from Rusty Taco here in Dallas. Definitely give it a try. I also have a thing for all things buffalo so this creation is totally up my alley and sure to win your heart with cooking time coming under 20 minutes.

Quick & Easy Week Night Dinner - Buffalo Shrimp Tacos
INGREDIENTS:
(Makes 4 servings)
1.5 lb medium peeled, deveined, tail off shrimp
1/2 cup frank’s red hot sauce plus some for topping
2 tsp garlic powder
2 tsp onion powder
Salt + Pepper
1 package white corn tortillas (I estimated about 3-4 per person)
1 cup red cabbage chopped
1/2 cup celery chopped
1/4 cup blue cheese crumbles (can drizzle blue cheese salad dressing)
INSTRUCTIONS:
Place shrimp in a medium bowl, evenly season with salt, pepper, garlic powder and onion powder. Add Frank’s Red Hot Sauce to bowl and toss, evenly coating shrimp with sauce. Set aside.
Chop cabbage and celery and set aside.
Heat a medium skillet, spray with cooking spray and toast each side of each tortilla, repeat cooking spray between tortillas. Wrap in a dish towel to keep warm and set aside.
Once all tortillas are toasted add shrimp to medium hot skillet. Cook until no longer translucent, turning half way through cooking process.
Assemble your tacos per preference. (I added extra hot sauce in addition to what is on the shrimp and my husband added crumbled blue cheese and blue cheese dressing. Ranch, shredded carrots, and shredded lettuce are also a great topping options. Dress them up however you would like. )
