QUICK & EASY WEEK NIGHT DINNER - Homemade Pesto
Pesto is such a versatile sauce...use it on pasta, chicken, or a spread for sandwiches. So many possibilities, plus its actually quite easy to make. I prefer homemade pesto so I can tweak it to my taste preferences. This one includes basil from my little garden and a few surprises that you might not expect.
QUICK & EASY Homemade Pesto
HERE IS WHAT YOU NEED: Basil, kale, spinach, olive oil, pine nuts, lemon, parmesan cheese, garlic, salt, & pepper. I like to add the kale and spinach to add bulk so that I don't have to use my entire basil plant in one haul.
WHY THIS WORKS DURING THE WEEK: I typically make a batch of the Homemade Pesto and use it in various ways through out the week. This recipe makes about a cup and its plenty to last several dishes. I actually ended up having to throw some away. Pesto has big flavor so no need to douse dishes with it. A little goes a long way.
LET'S GET COOKING: Literally throw everything in the food processor and blend until smooth. It is really that simple. Taste test and adjust salt and pepper accordingly. Add to your favorite dishes.
QUICK & EASY WEEKNIGHT DINNER - HOMEMADE PESTO
Ingredients:
1 cup fresh basil
1 cup fresh kale
1 cup fresh spinach
1/4 cup olive oil
1/4 cup grated Parmesan cheese
1/2 avocado
1 lemon juiced
3 garlic cloves
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin (optional)
Salt + pepper to taste
Instructions:
Measure out all ingredients and add them in the order listed above.
Pulse until smooth. Scrape sides of bowl with spatula. Blend until smooth through out.
Add salt and pepper to taste.
Add to your favorite dish & enjoy!
