Quick & Easy Week Night Dinner - Caprese Chicken
The best part of this recipe is that it isn't so much a recipe, as it is assembling foods in a slight order. You can do that right? I love helping individuals learn how to prepare balanced meals at every level of cooking and this bad boy is for the beginner! Don't let it fool you though, it's delicious. Baked chicken gets real old. This is an easy twist to jazz it up a bit. To be honest when I first came up with this idea I was not that enthusiastic about it. I cut into the chicken and took one bite...to my surprise it was packed full of flavor. Delicious food does not require a lot of fancy and unique ingredients. Simple is usually better.

Quick & Easy Week Night Dinner - Caprese Chicken
INGREDIENTS:
(Makes 4 servings)
4 small to medium boneless, skinless chicken breasts (I usually buy two larger breasts and cut them horizontally into four breasts, you can also purchase the thin cut chicken breasts)
2-3 basil leaves per chicken breast (8-10 leaves for 4 breasts, typically an entire small package)
2 roma tomatoes thinly sliced
16 oz mozzarella cheese thinly sliced (one medium ball, I also have used shredded mozzarella about a 1/2 cup)
2 tsp salt + to taste
2 tsp pepper + to taste
2 tsp garlic powder + to taste
INSTRUCTIONS:
Preheat oven 400 degrees
Spray a medium casserole with nonstick spray, lay chicken evenly in dish.
Season chicken on both sides with salt, pepper, and garlic powder.
Lay 2-3 basil leaves on top of each chicken breast.
Lay 2-3 slices of roma tomato on top of basil.
Lay 2-3 slices of mozzarella on top of roma tomatoes.
Season lightly with salt and pepper.
Place in oven for 30 minutes or until the mozzarella is lightly browned.
Pair with your favorite garlic toast or roasted potatoes, plus a steamed vegetable.
