QUICK & EASY WEEK NIGHT DINNER - Venison Chili
The temperature around here has dropped significantly, which puts me in the mood for hearty chilis and stews. This weekend the low is 22 degrees and the high is 71 degrees...only in Texas. Oh...and did I mention there is a chance for snow on Sunday morning?
QUICK & EASY Venison Chili
HERE IS WHAT YOU NEED: 1 lb venison (sub ground beef or turkey, I use venison because I have an entire freezer full of it), 1 red bell pepper, 1 yellow onion, 3-4 garlic cloves, 2 tsp cumin, 2 1/2 tsp chili powder, 2 tsp coriander, 1 tsp red pepper flakes, 1 tsp oregano, 1/2 tsp cayenne pepper, 1 large can diced tomatoes, 1 large can tomato sauce, 1 can kidney beans, salt + pepper to taste
WHY THIS WORKS DURING THE WEEK: This recipe only takes 30 minutes and requires minimal preparation, throw everything in a pot and simmer for 15-20 minutes. It is perfect for leftovers and actually tastes even better the next day. Often times I will make this recipe on Sunday to enjoy later in the week.
LETS GET COOKING: It's pretty simple. Dice bell pepper, onion, and garlic. Add to stock pot with olive oil and sauté until soften. Add venison and sauté until no longer pink. Add all spices. Add beans, diced tomatoes, tomato sauce. Bring to a boil. Reduce heat and simmer. Add toppings and enjoy.

1 lb ground venison/beef/turkey
3 tsp cumin
3 tsp corriander
2 chili powder
1 tsp cayenne powder
2 tsp oregeno
2 tsp red pepper flakes
1 large can diced tomatoes
1 large can tomato sauce
1 large can of kidney beans or pinto beans
INSTRUCTIONS:
Dice bell pepper, onion, and garlic. Add to stock pot with olive oil and sauté until soften.
Add venison and sauté until no longer pink.
Add all spices.
Add beans, diced tomatoes, tomato sauce.
Bring to a boil. Reduce heat and simmer for 15-20 minutes.
